COOKING:

  1. Boil the broth from the chicken shins and remove the meat from it.
  2. Add cream to broth and boil down until thickened.
  3. Peel and chop the vegetables.
  4. Heat shins and vegetables in cream broth.
  5. Serve with endive leaves.
